Easy Roasted Potatoes with Garlic and Italian Seasoning

When I left home and moved to NYC to go to college, I had no idea how to cook. This was before Facebook, Instagram, and Pinterest, mind you. I wasn't able to type something in and see a video on how to do it and so I ate lots of pizza and junk food.  Even though I was working out, I just couldn't understand why I wasn't losing any weight. Over the years I have realized the importance of cooking at home and making healthy food taste amazing. I grew up eating fast food and vegetables were not something we ate at home.  If on the rare occasion there were veggies they never tasted good. I have learned some easy and fast ways to make veggies taste amazing and I am happy to incorporate them into my daily meals.  I hope you try some of these recipes out for yourself.

Let's start with these bomb roasted potatoes! I love potato everything and I will never say no to potatoes so I had to learn how to cook them in a healthier way instead of always having them as just french fries.  These potatoes have so much flavor and are an amazing addition to any meal.

Ingrediance 

  • Fingerling Potatoes: I find that these work best for roasting! They get crispy and are the perfect size, so you only have to cut them down the middle vs larger potatoes that require more chopping. Use as many as you want, I fill a baking sheet full single layered. Then we have leftovers... ok probably not because they are so good. LOL
  • 4-5 Cloves of Fresh Garlic: Chop into pieces and set aside. 
  • 2-4 Tbs Olive Oil
  • Italian Seasoning Blend
  • Rosemary
  • Salt and Pepper
  • Large Ziplock Bag

Directions

Preheat Oven to 400

Cut potatoes in half or small wedges and add to ziplock bag.

Add olive oil and Italian seasoning, rosemary, salt and pepper to the bag. Zip and shake, shake, shake. Yes, also shake your booty. It makes them taste better for some reason.  Not sure how much seasoning to add? This is where you will have to do trial and error. I am not a huge "measure everything out" kind of person. I do like my veggies and potatoes well seasoned so test it out until you perfect these bad boys just how you like them. 

Lay your well shaken and seasoned potatoes flat on a baking sheet. Only one layer, if you have extra just add a second baking sheet. We want all the potatoes to lay flat on the pan. 

Bake in the oven for 25 min. 

Flip over potatoes and add the chopped garlic to the mix and cook for an additional 20 min or until potatoes are brown and crispy.  Note: We add the garlic halfway through to avoid burning. 

Toppings: These potatoes are yummy just as they are or you can add some parmesan cheese and or fresh parsley. We are trying to eat less dairy so we just have them with good ol' ketchup.

True Calling Episode 1: Living the Life that is Calling You.

I am so excited to publish our Travel Vlog! We named this series True Calling because of our beautiful baby girl True and the feeling within us that inspires us to go out and explore what life has to offer. We want to see places, meet people, experience different cultures, and gain knowledge about life and the deeper meaning behind it all. Most of us have things, ideas, dreams, and lives we would rather be living than our own and we hope this series will inspire you to listen that voice. When we tune into ourselves and block out the noise of others we will find our true calling and be able to live our purpose, happy, healthy, and full of love. 

In this episode Bradford and I arrive in Playa Del Carmen Mexico. We talk about why we decided to travel for a year with True, plus our friends Glenna and Dustin came to visit. Watch as we take them to one of our favorite cenote parks Kantunche.

Introducing my new vlog: Normal Girl in a Fitspo World

Hello from Mexico! I am really excited about two new video blogs my husband Bradford and I are creating! We are launching our family adventure vlog, "True Calling" where we will be documenting the next year of our lives as we travel to new and interesting places with our daughter True.  Every person has a calling and a purpose in life, but so often we end up living the lives that are expected of us instead. Bradford and I have always loved to travel, see the world, have amazing adventures, and meet new people! After having True we realized that we would like to add more children to our family down the road. Knowing that as True gets older she will need more stability, we felt like the time for traveling is now! I am so excited to have this time with her and Bradford as we work from the road and answer our true calling to live a meaningful and happy life. We are currently living in Playa Del Carmen Mexico! I will be posting our first travel video later this week! Stay tuned.

My second vlog that I am really excited to share is this one, "Normal Girl in a Fitspo World." As we are fulfilling our purpose and our hearts with joy on our family adventure, I am also working on living the healthiest life possibly.  What does that mean? Great question! That is exactly what I am going to be figuring out on my health journey. I have been every size from a 6 to a 14 and recently went from having a pregnant belly and back down to a size 12 (where I am currently). I had my daughter 10 1/2 months ago and my body is just now feeling back to normal and ready to start working out regularly. When you are wanting to live a healthier lifestyle, I find social media to be extremely toxic. The image of health in the "Fitspo world" is extreme and tends to have a negative vs. positive effect on my mental state. I have realized that I want to be fit and healthy and that even though I am doing wonderful things for my body, it may never look like the image of health we are being sold or see so often on social media. I have decided that I am okay with that and when it comes to the way by body looks, I am cool with being a normal girl in a fitspo world. I hope you join me as I start this fitness and healthy journey with a new and healthy perspective.  

In the first episode: "Started from the Bottom and Now I am Here.... Again," I give you my body image and health history.  There are so many things I have learned over the past 13 years of my health journey that have contributed to the mentality I have about health and my body now. Before I get going on all the workouts and recipes I wanted to just talk about how I found myself here! 

I would love to hear your feedback and answer any questions you have. My goal is to create a community of likeminded women who are working to live their best life.  Together we can quit diet culture and discover authentic health and wellness.

Our Makeover Day with Children's Hospital LA

This summer, we had the honor of introducing a self-love course to the Division of Adolescent Youth and Medicine at Children's Hospital LA. Through this program, Healthy is the New Skinny and Natural Models LA worked with 6 chronically-ill teen girls to develop a healthy body image by teaching them to process media in a healthy way as well as practicing self-love and care.

Throughout our 8 weeks with these girls our courses included identifying harmful advertising tactics in the media, chatting with a food scientist, learning new healthy recipes, and setting goals for a balanced and happy future. 

Each week, we watched these girls grow and we got to see their self-love glow during our photoshoot day! 

In the past at Children's Hospital, photoshoot days would be held, but unfortunately many of the clothes donated were too small for some of the patients and many were left out of the experience. We wanted to make sure that each of our girls felt beautiful so we had an amazing volunteer glam squad to give custom makeovers to each girl. We also had an amazing group of sponsors: JustFab.com, Fashion to Figure, Charlotte Russe, Hot Topic, who donated amazing pieces in all sizes for our girls!

We had a few of our amazing Natural Models present to help style and give these girls an experience they would never forget.
